banana split bread

ice cream's greatest concoction...now in bread form!

2 1/2 C flour
2 t baking powder
1/2 t salt
3 very ripe bananas, peeled and cut into chunks
1/2 C soy milk
1/4 C vegetable oil
3/4 C sugar
1 t vanilla
1/4 C chunky peanut butter
1/4 C semisweet chocolate chips
1/4 C crushed pineapple
1/4 C cherries, pitted and sliced

preheat oven to 375

in a large bowl, mix together the flour, baking powder and salt. 


in a blender, combine the bananas, soy milk, oil, sugar, vanilla and peanut butter.  blend until smooth.


add banana mixture to flour mixture. combine well.


fold in chocolate chips, pineapple and cherries. 


place batter in a lightly greased 9x5 loaf pan and bake for 50 minutes.
